I myself come up with and got a little confirmation that 1 liter of fresh mushrooms equals about 1 cup dried mushrooms, but then there are sources that say up to 2.5 cups dried mushrooms.
But it probably depends ultimately on how many mushrooms you want to spare and how luxurious it will be, but also how much they dried mushrooms are the volume and how much that will air in the measuring equipment such as a precise measurement is difficult to give.
Note, when you then soak the sponge for 30-60 minutes (1 cup mushrooms - 2 cups water) so use the broth!
Does anyone have a weight ratio of dried / fresh mushrooms please let me know.
