A filling pizza with plenty of mushroom flavor. Parma Crisps, mushroom cream and toppings can be prepared.
2 pizzas
Ingredients:
- 2.5 cups water
- 2 tbsp olive oil
- 1 tbsp dark syrup
- 0.5 tsp salt
- 7 dl vetemjöl
- 0.5 cup Parmesan cheese, grated
- 12 g torrjäst
Parma Chips:
- 10 pieces of Parma ham, slices
Champinjonkräm:
- 400 grams of mushroom
- 2 tbsp olive oil
- 1 teaspoon salt
- 2 krm svartpeppar, nymald
- 0.5 dl creme fraiche
- 1 dl parmesanost, riven
- 3 tablespoons brandy
Topping:
- 2 l chanterelles, fresh
- 2 tablespoons butter
- 1 teaspoon salt
- 2 krm svartpeppar, nymald
- 1 teaspoon granulated sugar
- 1 teaspoon thyme
- 1 red bell pepper
- 1 dl parmesanost, riven
- 100 g olives, like sun-dried
Garnish:
- 0.5 cup chives, finely chopped
- 1 cup sour cream
To do this:
- Heat the water to 45 °. Mix water, olive oil, syrups, and salt. Add flour, Parmesan cheese and finally the yeast. Work into a smooth dough and yeast uncovered about 40 minutes.
- Parma Crisps: Preheat the oven to 150 degrees. Add skinkskivorna bakpappersklädda the plates. Dry the center of the oven 20-30 minutes, depending on skinktjocklek, until they are brittle. Remove the slices carefully and let cool on wire rack.
- Mushroom Cream: Clean and cut mushrooms into quarters. Fry them in butter to golden. Add salt and pepper. Mix the mushrooms with the remaining ingredients to a smooth paste. Leave to cool.
- Topping: Ansa kantarellerna eller låt förvällda rinna av. Stek dem i smör till fin färg. Krydda med salt, peppar, socker och timjan. Kärna ur och finhacka paprikan. Höj ugnsvärmen till 225°.
- Put the dough on floured workbench and divide it into two pieces. Roll each piece into a circle, about 30 cm in diameter. Spread with mushroom cream and sprinkle with mushrooms, peppers, cheese and olives. Bake in middle of oven about 15 minutes.
- Cut pizza in the ears. Garnish with chives, sour cream and Parma chips.
